It's freezing cold outside, but tonight we are having Avocado shrimp soup La Fuentes style:
Saute onion, a stalk of celery, a carrot chopped, I added (a packet of my frozen cilantro mixed with jalapeno pepper and onion from the garden)
Fresh cilantro and a squirt of lime will do,
toss in the unshelled shrimp to cook to a luscious pink,add a box of broth, chicken or veggie, and a large can of crushed or diced tomatoes.
Simmer-finish with avocado pieces or slices, and top with sour cream.
total YUM...it's a warm shrimp cocktail in the freezing winter.
